  • 4 large slices white bread, 1 cm thick, each cut in half, or 8 small slices, of rustic bread, preferably homemade bread (best one day old)
  • a peeled garlic clove
  • Extra virgin olive oil, preferably of the deep green, fruity kind
  • Salt
  • optional:
  • 2 handful ripe cherry tomatoes (room temperature)
  • A handful of fresh basil, torn into small pieces
  • A good pour of olive oil
  • Salt and pepper, to taste
  • optional:
  • good-quality white wine or herb vinegar
  • optional:
  • Cheese like mozzarella or burrata
  1. Grill the bread slices over a moderately hot fire (grill pan or grill oven) until they are nicely toasted on both sides, turning frequently to ensure even browning. Be careful not to burn them; they will cook in only a few minutes.
  2. Now take a garlic clove and
  3. Rub each slice of bread (the amount of garlic is to taste)
  4. Now sprinkle your bread liberally with your olive oil.
  5. The slices should be nicely soaked.
  6. Salt the slices to taste.
  7. Now you have authentic bruschetta as its basic best.
  8. If you want, however, you can top each slice with the tomato mixture, which you make by mixing together all of the ingredients mentioned above in a bowl right before you serve your bruschetta.
