The zucchini fritters with yogurt are soft and fragrant for the freshness of the erbs, ever-present throughout the Turkish cuisine. They are a quick and easy appetizer for those who usually do not like to fry like me, but I assure you these are always good. The Turkish cuisine is one of the best European cuisine, a meeting of Asian and Mediterranean cuisine, rich in spices and olive oil.

Ingredienti
  • 1 medium zucchini grated
  • 4 tbsp spring onions (including white parts), finely chopped
  • 4 tbsp dill (including stalks), finely chopped
  • 4 tbsp parsley (including stalks), finely chopped
  • 2 tbsp mint (including stalks), finely chopped
  • 1 cup feta cheese crumbled yet not mashed 7 oz
  • 1 cup thick yogurt
  • 1 eggs
  • ⅓ tsp ground black pepper
  • 1 tsp salt
  • ½ cup all purpose flour sifted
  • vegetable oil for frying
Preparazione
  1. prepare the batter: in a colander combine grated zucchini and salt and set aside for 10 minutes (while you are chopping herbs)
  2. squeeze the zucchini with your hands to remove the excess of liquid
  3. add chopped spring onions, dill, parsley, mint, crumbled feta cheese, yogurt, egg, ground black pepper and mix well
  4. add sifted flour and baking powder and then gently combine to make sure that when scooped and released the batter slowly slides down back to the mixing bowl - add more flour for the desired texture if needed
  5. fry the fritters: preheat a cast iron pan / non-stick pan and oil it.
  6. make sure the oil does not burn or so would your fritters
  7. when a drop of water jumps and sizzles in the pan, you are ready
  8. take a tablespoon of the batter, place on the frying pan and flatten it
  9. repeat to fit in as many fritters as the pan allows
  10. fry until golden brown on both sides shaking the pan now and then
  11. use two wooden spatulas to turn sides as these fritters are rather gentle
  12. place the cooked fritters on a paper towel to remove the excess of oil.
