Apple Cranberry Pie

Dosi per: one 8-inch pie
  • 5 granny smith apples, peeled and cut into eighths
  • ½ cup fresh or frozen cranberries
  • ⅓ cup all-purpose flour
  • ⅔ cup granulated sugar
  • juice of ½ lemon
  • ½ teaspoon ground cinnamon
  • pinch of salt
  • 1 recipe pie Dough (recipe above)
  • 2 tablespoons cold unsalted butter, cut into pieces
  • heavy whipping cream as needed for garnish
  • granulated sugar as needed for garnish
  1. preheat the oven to 350°
  2. toss together the apples, cranberries, flour, sugar, lemon juice, cinnamon and salt and set aside while rolling out the dough
  3. roll out one disc of pie dough on a well-floured work surface into a 12-inch circle
  4. transfer to a pie dish and add the filling
  5. sprinkle the top with butter
  6. roll out the remaining disc of pie dough on a well-floured work surface and place on top of the filling
  7. crimp together the top and bottom crusts
  8. cut a couple of vent holes on top, brush with heavy cream and sprinkle generously with sugar
  9. place the pie on a parchment-lined sheet tray
  10. bake for 1 to 1½ hours, or until the filling is bubbly
  11. allow to cool before serving
  12. a little whipped cream never hurt a piece of pie!
