Ingredienti
  • 150 g plain flour
  • 100 g wholemeal plain flour
  • 2 tsp baking powder
  • ½ tsp bicarbonate of soda
  • 250 g Plain Chobani Strained yoghurt
  • 300 g cherry tomatoes
  • 100 g diced mozzarella
  • 100 g diced chorizo
  • 2 eggs
  • 4 tbsp olive oil
  • salt
  • black pepper
  • oregano and thyme, to your taste
Preparazione
  1. preheat oven to 180 °C
  2. in a large bowl mix together both flours, baking powder, bicarbonate of soda and herbs
  3. in another bowl, beat together yoghurt, eggs and olive oil
  4. pour the wet ingredients into the large bowl and mix until almost combined
  5. add mozzarella, half the cherry tomatoes, chorizo and gently mix
  6. line a 12hole muffin tin with muffin cases and fill them with the mixture
  7. bake for 20 minutes
  8. sprinkle the remaining cherry tomatoes with olive oil, salt and thyme, and bake in the oven at the same time as the muffins
  9. serve the muffins while still warm with the roasted cherry tomatoes on the side.
