Fattoush is a bread salad that has become synonymous with the Middle East.
It's a good choice when you want to use up some soon-to-expire vegetables and stale bread.
Bread holds a symbolic, almost revered, status in the Middle East.
Growing up, kiss it and place it somewhere it would be appreciated.
"Bread and penny never wasted": the idea is to make use of what is available and in season.
Here is one of the many versione I've made over time.

Ingredienti
  • 4 tbsp extra virgin olive oil, plus extra for serving
  • juice of 1½ lemons
  • 200 g / 7 oz / mixed green leaves
  • 2 tomatoes, cut into thin wedges
  • 2 small red onions, thinly sliced
  • 100 g / 3½ oz / radishes, thinly sliced
  • 100 g / 3½ oz cucumber, halved lengthways and thinly sliced
  • 2 tbsp finely chopped dill leaves
  • a small handful of parsley leaves
  • 4 tsp sumac
  • 75 g / 2½ oz pomegranate seeds
  • 115 g / 4 oz feta cheese, crumbled
  • 1 recipe quantity Toasted Triangles
  • 1 ripe avocado
  • sea salt and freshly ground black pepper
  • lemon wedges, to serve
Preparazione
  1. to make the dressing, put the olive oil and most of the lemon juice in a mixing bowl and whisk together welll
  2. adjust the sourness by adding more lemon juice, if you like
  3. (note that the Sumac wil add a tang to the salad, so it's best to err on the side of caution first and adjust the zing of the salad once it has all been dressed)
  4. season to taste with salt and pepper
  5. set aside
  6. put the mixed leaves, tomatoes, red onions, radishes, cucumber, dill and parsley in a serving bowl and drizzle over the dressing
  7. toss well, then sprinkle with the Sumac, pomegranate seeds, feta and toasted triangles
  8. cut the avocado in half, remove the pit and scoop out and dice the flesh, then add to the salad and gently toss again
  9. taste and adjust the seasoning, if necessary
  10. divide among four bowls an serve with lemon wedges and some extra olive oil.
